Do I need a Blackstone griddle to follow the recipes?
A Blackstone is ideal — the high heat is the whole point. That said, most recipes will work on any large flat-top griddle or even a very hot cast iron skillet. The technique stays the same, the results just get closer to restaurant quality the hotter your cooking surface gets.
